INDIAN STYLE CRAB, MASALA CRAB!!

Everyone in my family is fond of sea food. But we usually don’t cook these at home (except fish and prawns). So one fine day my dad and sis went to buy fish and instead bought fresh and real good crab for me to cook!  😨 It was my first time to cook crab and I had no idea what to do with it. They wanted to have it the Indian way. I searched on net, asked some friends but nothing satisfied me. So I came up with my own recipe i.e. of using everything I have at home and the ingredients complimenting each other without too much of work;). After I was done, it looked great but I was kinda nervous about the taste. And guess what? It was yummy :). The flavors complimented each other very well. Never thought of posting this random recipe but my sister asked me to do so while licking the crab’s claw. 😝

Ingredients
500g crab, prepped
4 tbsp mustard oil
1 tsp fenugreek seeds
2 tsp fennel seeds
3 tsp coriander seeds
5-6 whole black pepper
6-7 cloves
1 star anise
1 cinnamon stick
2 Bay leaves
1 dry red chilli
1 tsp red chilli powder
1 tbsp coriander powder
2 tsp cumin powder
1 tsp turmeric powder
2 tsp sugar
Juice of 1 /2 lemon
1 tomato, pureed
2 onion, sliced
10-12 cloves of garlic, chopped
1 tbsp ginger, chopped
1/2 cup coriander leaves, chopped
Salt, to taste

Method
1. Heat oil in a kadhai, add all the whole spices to release their flavors.

2. Throw in sugar, chilli powder and turmeric powder. Gives a nice colour if you add it now. (tip by mom)

3. Fry onion slices, chopped garlic and ginger till slightly browned.

4. Mix tomato puree and keep cooking till the oil floats on top.

5. Add salt, cumin and coriander powder and 3/4 cup water. Let the water boil.

6. Put crab and stir well. Cover for 10 mins or till the crab is cooked(on medium heat). Squeeze juice of 1/2 lemon. Stir.

7. Top with some ghee or butter,  garnish with coriander.

White Chocolate & Strawberry Scones..

This is a quick one guys. Just to deal with the stress of exams. Oh my my! baking is such an addiction! 😍

Ingredients
2 cups plain flour
1/3 cup semolina
2 tbsp butter
2/3 cup granulated sugar
1/2 tsp salt
1 n 1/2 tbsp strawberry jam (any jam will do)
1/2 cup Buttermilk
4-5 strawberries 🍓 roughly chopped
3 tbsp white chocolate chips or chopped
1 tsp baking powder
1/2 tsp baking soda
1 tbsp chopped mint (optional)

Method
1. Soak semolina in buttermilk and baking soda. Keep aside for 10 mins.

2. Beat butter and sugar till a bit fluffy. Add jam and beat again.

3. Throw in the rest of the ingredients and knead a soft dough with the buttermilk mixture. Don’t work it too much. (the dough should be real soft)

4. On a floured surface roll the dough, about 2 cm thick. Cut into desired shapes.

5. Aline on a baking sheet and let it rest of 30 mins ( very important to rest the dough so don’t skip the step😋)

6. Bake in a preheated oven at 200°C for 15-20 mins. If you want to cook it more then flip and bake for 5 more mins. ( I prefer thinner and a tad bit crispy 🙂

7. Glaze with butter and sprinkle sugar. Serve with cream, jam and tea.  ☺

These were so yum that my mum ate them all.😁

As I always say.. Keep experimenting with flavors. Plain ones are also very good. 👌

Tea time!! Oatmeal muffins..

These were my first healthy muffins and I loved it! You can’t eat those regular unhealthy-yet-tasty muffins everyday. But what to do? I can’t stay without baking and having those gorgeous freshly baked cakes. One of the blogs I follow Visual Blog came to my rescue. And here I present healthy oatmeal muffins. Comparison of regular and these muffins isn’t fare. Both have different tastes (I have decided to make these often) . Recipe inspired by the same blog. Thanks ☺

6 tbsp roasted oats
2 tbsp butter
2 eggs
2 tbsp chopped chocolates
2 tbsp roasted nuts
4 tbsp sweetened condensed milk (you can use honey but my mother told that heating honey isn’t healthy, makes it toxic)
2 tsp coffee powder
Cherries 🍒,  Chocolate sauce optional

Method
1. Preheat the oven at 180°C.

2. Cream the butter. Mix one egg at a time.

3. Add rest of the ingredients except oats and mix well.

4. Fold-in roasted oats just before baking else the batter will be dry.

5. Transfer into greased moulds (not more than an inch) and bake for 20 mins. You can also bake it in a pan and later cut with cookie cutter.

These will be little dry and less sweet so goes perfectly with tea 🍵. Or else serve with chocolate sauce, caramel sauce, ice cream.. anything. :)

Let’s roll some chicken (Spicy Chicken Roulade)

Hello peeps!
Sorry for the long gap. I was exploring Aurangabad all this while and it is an awesome place, a must-go-once-in-a-lifetime place. The food is way cheaper than Pune and very tasty :D. I didn’t have the patience to click pictures 😥..( Sorry). Rest about the place will be on my travel blog (whenever I write one).

So, about this recipe, it’s a very easy one and packed with flavors. I thought of it and made it right away. Traditionally rolled chicken with a stuffing is known as ‘chicken roulade’. Here, you can experiment with the meat and stuffing, BOTH! 😆 I went with a spicy and cheesy filling. 

4 boneless chicken breasts
2 tbsp olive oil 
1.5 tbsp finely chopped green chillies (if you can bear the heat) 
1 tbsp garlic, chopped 
1 tsp oregano 
1.5 cup of grated cheese (any kind you like) 
Salt, to taste 

Method
 1. Slit the chicken breast from one side making it thinner. Do not cut the whole thing, keep it in one piece only. Pat lightly with a kitchen hammer or any heavy thing.

 2. Rub some oil and salt on it and keep aside. 

3. Mix rest of the ingredients in a bowl.

4. Spread the filling on the chicken breast leaving an inch space on the sides. Roll tightly. ( if you roll it real tight then you don’t have to tie it for shallow frying) 

5. Tie it with a thread and shallow fry. If you want to pouch then roll it in a cling film. I coated it with bread crumbs ( without the thread) and shallow fried.
 
Enjoy it hot with melted cheese oozing out… Yum.. ☺

DUMPLINGS / MOMO

I love to eat momo 😍. When I was in Kolkata I used to have them frequently with my friends. In the city of joy, you will find these dumplings in every street, that too very cheap:o. They serve it with a clear soup and schezwan chutney (lol, I’m salivating🙊). But it is not easily available where I live now :'(. So, I have no choice other than making it at home. Actually it is not that difficult and I can stuff it with any filling I want.

Let’s start…

For the Dough

1.5 cup all purpose flour

1 tbsp oil

½ tsp salt

Water as required

Filling

150g minced chicken (if you are making veg momo, replace with 1 cup soaked soya granules or add more veggies)

½ cup chopped cabbage

3 tbsp chopped carrots

2 tbsp chopped capsicum

2 small onions, chopped

8-10 cloves of garlic, finely chopped

1 tbsp lemon juice

1.5 tbsp soya sauce

1 tsp chilli flakes

1 tsp ground black pepper

Salt, to taste

Method

  1. Knead a tight dough with flour, oil, salt and water. Cover and keep aside.
  2. In a microwave safe bowl, mix all the ingredients required for filling except chicken and microwave on full for 2 mins. Add chicken, mix well, again microwave for 2 mins or till the chicken is cooked. Cover for 30 mins. Bring it at room temperature.
  3. Roll the dough into a cylindrical shape and cut into equal pieces. Roll them flat and round (around 3 inches in diameter) keeping the sides thin.
  4. Here comes the tricky part, shaping the momos. It will take some practice (I learned it after trying on 2 momos, not very tough). Refer the pictures to understand it better. Fill the dough with 1 tbsp of the stuffing in the center. Apply water to the edges. Rest one side of the circle on your index or middle finger of left hand. Start pleating i.e. folding the rest of the side around 1 cm each fold overlapping the previous fold pressing on the edge resting on the finger. Pinch the ends, and done.

Alternative: If this is not your cup of tea, just gather all the sides, press and twist like a money pouch. Or simply stuff the half of the circle and cover it with the other half making a semi circle. Press well and pinch the corners together.

  1. Place these dumplings on a greased steamer pan and steam for 5-6 mins.

Alternative: I make my own steamer. Boil one cup water in a pan. Place a flat base container upside down in the center. Grease a plate and put the dumplings on it. Place the plate on the container carefully so that it is not touching the boiling water. Cover and steam for 5-6 mins.

  1. Serve hot with schezwan sauce or mayonnaise.

If you don’t want it healthy, go ahead and deep fry them. That tastes heavenly. Experiment with the filling. Chocolate momo is one of my favorites.

BORING BREAD PUDDING? NEVER AGAIN…😺

Today my mother told me to make bread pudding for breakfast. She loves my recipe of bread pudding😌. Actually, it is because I always make it a bit different by using different flavor, nuts etc. It is so damn easy and tasty.🙌

I will share my recipe for Orange Bread Pudding.

3 hot-dog rolls, sliced (it gives a crunchy crust and looks way better than sliced bread. Well, you can use that too)

2 large eggs

1 cup milk

zest of 1 orange

juice of 1/2 orange

1 tsp vanilla essence

4 tbsp sugar (brown sugar will taste better)

2 tbsp butter

chocolate chunks, cherry, almonds, cashew, raisins, white chocolate (optional)

Method

1. Toast the bread slices in butter.

2. In a shaker add milk, sugar, orange zest, orange juice, vanilla essence and eggs. Give it a good shake ( I use shaker because it is easy to clean. If it does the job of a blender then why to soil more things :roll:).

3. Preheat the oven for 180°C.

4. Arrange the toasted bread in a greased baking dish. Top with chocolate chunks, nuts, whatever you are using. Pour over the milk and egg mixture so that 3/4th of the breads are soaked.

5. Bake for 30 mins. ( Don’t worry if the center is less cooked, microwave it for 30 secs or 1 min on full)

That’s it. Serve it hot with chocolate sauce, toasted nuts, cream or vanilla ice cream. And don’t forget to try other flavors like strawberry, chocolate, banana, saffron and loads of them😍.
