BASIL PINEAPPLE & COCONUT TARTLETS.. Pretty, eh??

After chocolate my next favorite flavor is pineapple 🍍☺. I had this idea of making a pineapple tart from long. Just couldn’t decide on how to make it different. So I decided on making tartlets having basil pineapple filling topped with coconut cream. My only problem was that I don’t have tartlet moulds 😁. I used cookie cutters which made the tartlets look prettier :D. And the flavors worked really well. Yum!

Ingredients

For the Shell
8 tbsp unsalted butter
3 tbsp sugar
1/4 tsp salt
1 1/4 cups all-purpose flour, plus more as needed

For the filling
2 cups diced pineapple
1/2 cup sugar
1 tbsp butter
Juice of 1/2 lime
Handful of basil
A pinch of salt

For topping
Whipped coconut cream ( I didn’t get coconut cream so I mixed normal whipped cream with coconut powder 😜)
Diced or sliced pineapple
Toasted coconut flakes

Method

1. Combine all the ingredients for the tart shell and knead till a soft dough is formed. Don’t overwork the dough. Wrap in a plastic wrap and refrigerate for 30 minutes.

2. Heat butter in pan. Add diced pineapples. Cook on high flame for a minute then add sugar, salt, basil and 2 tbsp water. Cook on low flame till the pineapples are soft.

3. Roll the dough and place in tartlet moulds. ( You can also use cookie cutters like I did by placing 2 layers of the sides on the base with egg wash or milk. I got the sides by using 2 cutters of same shape, bigger and the medium one.)

4. Prick with a fork and refrigerate again for 20 mins.

5. Bake for 20-25 mins in a preheated oven at 350Β°F.

6. Bring the shells to room temperature. Put the filling in the base and top with whipped coconut cream, toasted coconut flakes and pineapple dices.

Serve with tea or as a dessert after dinner. ☺

I stored the shells in a jar and used them with different fillings as well. When my mother is not around, I quickly take 1 tartlet, fill it with Nutella, top with some whipped cream and eat it all at once… 😁🙊😝

A Messy Gooey Crepe Cake… Yeah I messed up..for good!!

So one fine night after dinner I had this irresistible craving for a super gooey and chocolaty cake.. But I was in no mood to bake this late and the waiting would have killed me.. πŸ˜…

To my rescue came a picture of a sexy crepe cake on instagram 😍… (Of course mine is no where near that one.. 😝) I loved the idea and started working on it.. πŸ˜†

Yeah it was supposed to be messy but I messed it a bit more with super flowy chocolate and thicker crepes… 😣.. Who cares! Satisfied my cravings.. Haha! 😜

No proper recipe.. I will just tell you what I did… ( you can use it if you can’t fight your cravings, that too late night 😁)

For the Crepes(12-15 ,6″ crepes)

3/4 cup plain flour

1 cup milk

2 eggs

2 tbsp unsalted butter, melted

A pinch of salt

1. Beat together milk and eggs in a medium bowl. Pour milk mixture into flour and salt mixture, whisking to combine. Whisk in butter. ( ideally should be stored for few hours)

2. Heat a 7 inch pan and brush with butter. Pour around 3 tbsp of the batter and swirl the pan till the bottom is evenly coated.

3. Cook for about a minute or till the crepe is slightly brown. Repeat till all the crepes are done.

For layering

I used melted chocolate and cream. You can use any type of frosting. I would love to try these with syrups or Nutella :). Just spread the frosting on each crepe and layer. Cut and serve chilled or hot depending on the type of spread with whipped cream or roasted nuts.

The reason I posted this idea is that no one, having a sweet tooth, should miss this thing. It is super simple, tasty and can look divine. (I will make it good looking next time) πŸ˜€ When I ate it I was like ” Arrgh! My life could have been so much better if I had any idea about this before! ” 😝

Retro Style Panna Cotta… Or Zebra Panna Cotta (Visually :p)

I made this dessert last week and yet could not decide on the name 😥. Anyway, what matters is that it is yummy, looks great and is easy to make. This dessert is inspired by Masterchef India 4 where it was named as ‘Orange and Chocolate layered Barfi’. Well.. It is certainly not a barfi. The recipe wasn’t disclosed, so I just made it my way :). (you can do it your way 😜)
The recipe is not very difficult, you just need to set a few things VERY FIRM and arrange them.

Ingredients
2 cups milk
100 gms white chocolate
100 gms dark chocolate
1 tspΒ  cocoa powder
2 tbsp powdered gelatin
2 tbsp sugar (or 1 tbsp brown sugar and 1 tbsp regular sugar)
2 tbsp any citrus jam or jelly
Nuts and cherry for garnishing (optional)

Method
1. Soak the gelatin in bowl with a bit of water.
Mix jam with 1 tsp of water and transfer to a small piping cone.

2. Heat each cup of milk in separate pans. In one, add sugar, dark chocolate, cocoa powder and brown sugar and in the other one, add white chocolate and sugar (vanilla extract can be added). Mix well.

3. Add soaked gelatin half in each pan and let it dissolve.

4. Pour the mixtures in separate rectangular tin or tray. (1-1.5 cm thickness) and refrigerate till the mixtures are set.

5. Demould and cut into strips. Arrange the strips alternating dark and white chocolate. Do two such layers.

6. Put it again in the fridge so that it is firm enough for cutting into roundels with the help of cookie cutter. After cutting, transfer into a plate and garnish with jam to cut the sweetness. Serve chilled.

7. You can also serve the strips in a glass with nuts, ice cream, cherries. πŸ™‚

Tip: Instead of white chocolate mixture you can use coconut milk and sugar. It will at a nice flavor.

Based on some suggestions and black and white strips I used the name ‘Zebra Panna Cotta’. Please don’t think I used zebra in this panna cotta. 😅

Croquembouche, My first try

Well I am a huge Masterchef fan, especially Masterchef Australia. πŸ™Œ

Croquembouche plays a key role in all the MC seasons. It is a French dessert made with choux pastry, filled and piled into a cone with the help of caramel.

So this was my very first choux pastry and of course “the croquembouche” πŸ™‚ (a mini one though). I don’t know if it was perfect or not but I am so proud of myself 😁. I couldn’t believe it came out this good in my first try. The crunchy crust.. chocolate ganache filling and caramel.. YUMMY !!:D ||Period ||

Chuck Scoops, Cut Cubes… Chocolate Truffles

I have a very important interview lined up and I am so darn stressed.. πŸ˜₯ I keep studying all the time. No time for cooking.. What to do? 😦 Wait! What will be better than chocolate for calming my nerves down! πŸ˜€ Mmm… 😐 CHOCOLATE TRUFFLES 🍫! πŸ™Œ But scooping is such a mess and wastage of chocolate! How about cubed chocolate truffles? Ingredients 300 gms good quality dark chocolate + 100 gms more 200ml double cream 50 gms butter Method 1. Melt 300 gms chocolate and rest of ingredients together. Mix well. 2. Pour in a lined or greased rectangular pan filling around an inch. Refrigerate for 2-3 hours. 3. Cut into cubes, chill for an hour. Dip in melted chocolate and coat with nuts, cocoa powder, grated coconut etc. πŸ˜€ So, how does it look?

Just Another Pretty Cake… But Super Easy!

Cakes are something I bake at least ones a week, may be more and never get bored of it. I have so many cake tins and silicone moulds that my mother tells me to open a store 😁.  Fabfurnish.com is my first preferred site for buying these.

From many recipes I have for a cake, I will tell you the easiest one. My sister is fond of the cakes I bake but sadly she stays 1100 miles away from us. 😦 So whenever she comes here or we go to Kolkata, she and her friends get a treat of cakes. ;). The main problem I faced was that the cakes should stay moist, tasty and shouldn’t rot for 5-6 days without a refrigerator.( Since the climate here is hot and humid, it doesn’t last long.) That is why I went for this recipe. It is not very rich yet tasty.

Basic Recipe

3/4 cup water

3/4 cup granulated sugar

3/4 cup oil

1 tbsp vinegar or lemon juice

1 tbsp vanilla extract

2 cups plain flour

1 tsp baking soda

1 tsp baking powder

A pinch of salt

Method

1. Dissolve sugar and salt in water properly. Add vinegar and vanilla extract.

2. Fold in sieved flour, baking powder and soda and flavoring. Batter should be of ribbon consistency.

3. Pour into a greased pan less than 2/3rd. The cake will rise a lot because of soda and vinegar. Bake in a preheated oven at 180Β°c

Very easy, isn’t it?

Chocolate and vanilla marble cake. A trick to make your chocolate cake more rich is to boil cocoa powder in a bit of water, cool and use.

BORING BREAD PUDDING? NEVER AGAIN…😺

Today my mother told me to make bread pudding for breakfast. She loves my recipe of bread pudding😌. Actually, it is because I always make it a bit different by using different flavor, nuts etc. It is so damn easy and tasty.πŸ™Œ

I will share my recipe for Orange Bread Pudding.

3 hot-dog rolls, sliced (it gives a crunchy crust and looks way better than sliced bread. Well, you can use that too)

2 large eggs

1 cup milk

zest of 1 orange

juice of 1/2 orange

1 tsp vanilla essence

4 tbsp sugar (brown sugar will taste better)

2 tbsp butter

chocolate chunks, cherry, almonds, cashew, raisins, white chocolate (optional)

Method

1. Toast the bread slices in butter.

2. In a shaker add milk, sugar, orange zest, orange juice, vanilla essence and eggs. Give it a good shake ( I use shaker because it is easy to clean. If it does the job of a blender then why to soil more things :roll:).

3. Preheat the oven for 180Β°C.

4. Arrange the toasted bread in a greased baking dish. Top with chocolate chunks, nuts, whatever you are using. Pour over the milk and egg mixture so that 3/4th of the breads are soaked.

5. Bake for 30 mins. ( Don’t worry if the center is less cooked, microwave it for 30 secs or 1 min on full)

That’s it. Serve it hot with chocolate sauce, toasted nuts, cream or vanilla ice cream. And don’t forget to try other flavors like strawberry, chocolate, banana, saffron and loads of them😍.
